Your In-Season Menu

In-Season Meal Ideas
Throughout the changing seasons, two meals will be shared that include recipes using in-season ingredients. One will always be a vegetarian option to help reinforce some of the principles we strive to teach at GLC – these principles being: variety, use of lean proteins & healthy fats, and a reduction of inflammation-causing foods. Nutrition facts will be included along with interesting facts and preparation tips for some of the highlighted in-season produce. If you’re lucky, I might even provide a healthy dessert option, also based upon in-season produce, naturally!         Enjoy! J
  • Meal One: Cider-Roasted Chicken /// Roasted Brussels Sprouts and Cauliflower /// Wild Rice with Mushrooms /// In-Season Produce Used: apples (cider), Brussels sprouts, cauliflower, mushrooms.
  • Meal Two: Barley Risotto with Butternut Squash /// Golden Beet and Spinach Salad /// In-Season Produce Used: butternut squash, beets, spinach.
  • Dessert: Jeweled Clementines with Vanilla Sauce /// In-Season Produce Used: clementines.</힤থ>

What's in season now?

Well, it’s January. And although (here in Virginia) we’ve been blessed with a very mild start to our winter, when it comes to thinking of fresh produce, it’s a far cry from the bountiful harvest of fruits and vegetables we enjoy during the summer months. But never fear! As our ancestors would have told us, there are still plenty of tasty options for fresh foods to keep our bellies full and our hearts warm as we journey farther into the coldest season of the year.

An important thing to note is this list includes the winter season produce (December, January, & February) for the United States. The in-season foods for Virginia, specifically, are highlighted in bold. J

It’s the time of year again… Time for us to put our best foot forward and say: “This year, I am going to be better!” And while we start the month with the best of intentions, by mid-February, we might as well have completely forgotten about those goals to eat more vegetables, to work out every day, and never eat another Hershey’s kiss or French fry ever again!
It’s easy to lose sight of our resolutions amidst the hustle-and-bustle of work, family and friends. These are what make up our lives from day to day but somewhere in there, after the dust settles, is you! This year, GLC wants to help you find balance in yourself.
